Chef Shelly Shares...

People often ask me what are my favorite things to cook? I like to cook a lot of different foods so that's pretty tough to answer. Here's one of my family's favorites. Homey, quick and tasty. I hope you enjoy.

Oretega Burgers

1 1/2 pound extra lean ground beef
1 cup saltine cracker crumbs
1 large egg
1 package taco seasoning mix

2 Tablespoons Canola oil
1 can diced green (Chili(we often by Ortega brand chilies, hence the recipe name) 
1 cup cheddar cheese, grated
2 tablespoons black olive, sliced
15 oz can tomato sauce

serves 4 prep time 5 minutes cook time 25 minutes

Directions:

Mix beef, egg, crushed saltine crackers and taco seasoning. Form into patties.

Heat a large skillet on medium high and add canola oil. Brown patties on each side. Add tomato sauce, green chilies(add the juice in the can too). Add a cup of water. Bring up to a boil, reduce heat to low, cover and cook for 15 minutes. Remove cover and bring heat up to medium allowing the sauce to reduce for about 5-7 minutes. Add cheese and olives to the top of the patties. Spoon a little of the sauce on top of the patty to melt the cheese.

Serve with a nice salad and some Mexican rice.
